Miya's EazyZucchini Quiche March 31, 2009

pre-made pie crusts. Pre- bake the crusts for about 30 minutes so they are not soggy!!

4 zucchinis finely diced.
cook up 1/2 onion, add zucchinis, sprinkle with s&p, nutmeg, cumin, whatever you fancy!
brown and soften, turn off heat and let them cool.

custard:

3 eggs, 1 cup of cottage cheese (all I had in the fridge) can use yogurt, sour cream… 3 cups of milk or /rice milk/soy milk
1-2 cups grated cheese of any kind. s&p. blend all up!

assemble quiches: (will make 2!! so make sure to evenly divide up the filling and custard)
I like to spread the crust of the pie with mustard (whole grain is delicious)
then pour in the vegie mixture, top off with the wet ingredients.
bake about 40 minutes or till center is not wiggly!
