Ingredients:
1 pkg brown rice or whole wheat penne
Handful of sundried tomatoes chopped finely
1/3 cup chopped mint
¼ cup kalamata olives
½ red onion chopped finely
1 yellow pepper diced in cubes
¼ block of light feta crumbled
- bring water to a boil and add penne until soft.
- Strain noodles and add in all ingredients
- top with ¼ cup olive oil, 2 tbs balsamic vinegar, 2 tbs lemon juice, 1 tbs maple syrup, 1 garlic chopped finely, salt and pepper
