Penne Salad with Kalamata Olives and Sundried Tomatoes March 13, 2009

tomatopasta1 Ingredients:


1 pkg brown rice or whole wheat penne

Handful of sundried tomatoes chopped finely

1/3 cup chopped mint

¼ cup kalamata olives

½ red onion chopped finely

1 yellow pepper diced in cubes

¼ block of light feta crumbled

  1. bring water to a boil and add penne until soft.
  2. Strain noodles and add in all ingredients
  3. top with ¼ cup olive oil, 2 tbs balsamic vinegar, 2 tbs lemon juice, 1 tbs maple syrup, 1 garlic chopped finely, salt and pepper
