Ingredients
2 sweet potatoes 3 tbs low fat plain yogourt 1 can of black beans (or bean of your choice, or baked beans) 1 avocado 1/2 red onion 1 tomato 4 tbs shredded mozzarella salsa to your likingTo save time you can cut wash the sweet tater and pierce it with a fork a couple of times, then throw it in the microwave in a dish with 2 tbs of water for 15 minutes. Keep checking on it, until it is soft. If you are not in a rush, then wash and cut the potato in fourths, then steam it over the stove with an inch of hot water. When it is soft remove from heat. Meanwhile throw can of black beans in a pan over medium heat, mush it up with a fork, add salt and pepper to taste. Shred the Mozzarella, and cut the avocado in half, removing the pit, use a spoon to take out the avocado meat, and in a bowl mix the avocado up with a fork, add chopped red onion and tomatoes, and a dash of salt. Then add all toppings to taste over the potato- this is a fun family activity.
here is the final result- I added arugala on top of mine! Leftovers can be eaten in a corn tortilla the following day, or you can cut up some chicken, and top with it with some salad greens, be creative!
